My Seblod 3.3.5 form generates registered content within a registered category.
Is it possible to set permissions, so a logged-in registered user can ONLY view their own articles where access = registered?
I've made NO links to it anywhere for that access level. So, they would have to get them from somewhere else.
The prior web dev set the article and category permissions as public, so in theory someone may be able to get them off of Google.

How would that preclude someone who knew the link to old registered content when logged in as a registered user.

It wouldn't.
In that case I think you need to change the user rights. Or perhaps you can move the content to a new category and then provide new ways to it?
Make a local copy to test with backups.
